Choosing the right set of keywords in very important for maximizing your income.
We have been trying and testing various niches and targeting several keywords. Some pay high while some are just waste of time. Here are some broad categories of keywords that has paid well to us:

Celebrity sites are the least paying off all the websites we have. Same is the case with recipe related websites. It just takes too much time and is not worth the effort. You just have to choose the right keywords with good payout and less competition (which is rare). By less competition, I mean the webmaster/Adsense Publisher community targeting that keyword.
While choosing the keywords, always think from the your targeted audiences point of view. Try to get in their shoes and think what would they search for. Always be specific, dont target broad terms. Lets say you have a website that sells Mens Watches, getting women visitors on your website would be waste of your time and resources. It would make more sense to have a little targeted visitors (men) than a lot of women browsing your website.
Always chek your stats and see what people are searching for. Study their search behavior and patterns. This will help you in choosing the right keywords.
Always check the news. Lets say you operate a Gadget/Mobile Phone/Electronics related website. iPhone is released, you should immediately start targeting iPhone related keywords. The faster you act, the better rankings you will have.
